A Rare and Fantastic opportunity to shape and lead the future of our multiple Resort dining concepts, including 2 rosette awarded Brasserie - Clocktower, 3 rosette awarded restaurant - Horto, Michelin restaurant FiftyTwo, and our extensive conference and banqueting offering. 

The ideal candidate will have extensive experience running similar high quality, multiple outlet food and beverage operations, with quality and service delivery at the forefront. This is a hands on role, leading, empowering and developing the existing leadership and management team.

Job Summary

Responsible for overseeing all food and beverage operations across the Resort, including kitchens, restaurants, bars, conference and banqueting and room service. This role is accountable for delivering high levels of service and operational excellence, profitability, team engagement and development.

Key Responsibilities:

  • Lead, Manage and oversee the Restaurant and Kitchen teams in establishing and executing departmental and overall business goals.
  • Accountable for the overall operations of the Restaurants and Kitchens, including short and long range planning so that the business operates cost effectively and efficiently.
  • Monitor and analyse the products and services on offer, to maintain a competitive advantage in the market
  • Create and monitor quality of service throughout all Restaurants and Kitchens ensuring service delivery and support processes are on track to deliver a high level of guest service in an effective and cost-efficient manner.

Working Relationships/Communication

  • Oversee the interview process and select job applicants for all Restaurants and Kitchens.
  • Collaborate with stakeholders in the business to create and develop the dining concept, timelines of projects, promotional activity, packages and services on offer.
  • Build, promote and maintain cross-functional relationships with other departments of the business
  • Facilitate and organise management meetings, setting clear objectives.
  • Create development plans for all direct line reports, ensuring a consistent learning curve
  • Ensure direct reports communicate appropriately with their direct line reports and follow through on necessary objectives.
  • Positively manage supplier relationships, and ensure any contractual agreements are met.
  • Attend networking events and take part in industry initiatives as and when appropriate. and developmental needs.
  • Attend inter-departmental meetings as and when required.

Productivity

  • Provide and promote continuous professional development opportunities to maintain an empowered, progressive and knowledgeable Restaurant and Kitchen team.
  • Effectively supervise, discipline, mentor and support line managers with performance evaluations for all Restaurant and Kitchen employees
  • Ensure sign off of all Service Standards by position competencies for departmental managers
  • Ensure solutions meet strategic business objectives and quality standards within time, resource and financial goals
  • Develop and maintain all Standard Operating Procedures within the Restaurant and Kitchen Departments
  • Ensure the Restaurants and Kitchens are in good condition at all times reporting all maintenance faults.
  • Oversee monthly inventory of supplies, equipment and products.
  • Oversee supply stock and ordering of all products
  • Provide needs-assessment of training items related to guest service, food quality, service and sales and develop programs to increase team performance.
  • Ensure that the Restaurant and Kitchen teams are commercially aware, evaluating and driving the team's sales and productivity.
  • Drive the Resort's reputation and market presence, staying abreast of industry trends and competitor set.
  • Deliver exceptional guest experiences by maintaining consistently high service standards and product knowledge throughout the F&B team.
  • Ensure that food allergies and dietary requirements are treated with absolute seriousness.
  • Review and act on guest feedback, taking prompt action to resolve guest complaints and improve guest loyalty.
  • Enhance the hotel's image through online reputation management for F&B, driving positive reviews on key platforms and websites.
  • Ensure F&B operations strictly comply with all regulations (including health, safety and hygiene, food safety certification, licensing) and that potentially hazardous situations are identified, reported and corrected.
  • Create attractive F&B concepts, menus including menu engineering, products and promotions that drive revenue and profit, collaborating with stakeholders.

Financial Responsibility

  • Develop the F&B Operations business plan, financial targets and business volumes, as well as guests and team member experience.
  • Collaborate with the Commercial team to develop and execute powerful F&B sales, marketing and social media plans.
  • Manage F&B key partnerships to develop and maintain successful stakeholder relations.
  • Manage the F&B operations and forecast to support achievement of the Resort's commercial goals.
  • Review departmental results - including sales, costs, profit margins, covers, guest service and team satisfaction.

  • Ensure continuous professional development of self, including attending required training courses and seeking means of developing within the business
  • Promote continuous improvement in the level of quality and guest care provided by the business and make proposals/suggestions where applicable

  • Undertake any other duties commensurate within the position for which you are qualified.
